Are you a carrot lover or not? I have noticed that some people typically don’t go for carrots when snacking and others try to avoid it because it’s simply not their cup of tea. However, you are missing plenty of benefits if you do not include carrots in your diet from time to time.
In case you haven’t heard of this yet before, carrots are packed with so much goodness. It is a good source of beta carotene, potassium, antioxidants, vitamin K1, and fiber – which are all good for you! Some even claim that the carrot is the perfect health food.
I understand that not everyone enjoys its taste or crunchiness (depending on how it is served), but I want to share this simple and easy recipe with you that will probably make you not despise carrots a little less. Hey, you’d never know unless you try! There’s no harm in trying, it is just a delicious salad.
So, we all know that carrots will be the main star of this salad. But, I’m going to make sure that the other ingredients are also full of nutrition.

- 6 large carrots (depending if you are also sharing this with someone!)
- ¼ minced garlic clove (you can add more if you’re a garlic lover)
- 1 lemon (squeeze in ¼ lemon juice from it)
- ½ teaspoon of cumin (check out your local grocery store or health store for this)
- ¼ cinnamon (trust me, it tastes good!)
- ½ teaspoon of paprika
- 2 tablespoons of olive oil
- ¼ cup of cilantro
- salt and pepper to taste
And that’s basically it! Boil the carrots for 1 to 2 minutes, don’t let them go soggy as we still want the crunchiness. Drain it and rinse under cold water, then mix it all together and adjust the taste depending on how you like it.
